Matcha Chia Seed Pudding

By September 20, 2014

The other day,  I was craving a matcha latte from Starbs, but was too lazy to run out and get one... so I made some Matcha Chia Pudding instead.

This is a super quick, super healthy, inexpensive sort of fill your tummy snack. It also satisfies matcha and pudding cravings.

All you need is some almond milk (or whatever you have on hand), a dash of honey or agave syrup, and a heaping spoonful of matcha! More if you like that intense flavor.

I picked up my matcha from David's Tea, but some Asian supermarkets as well as other tea specialty stores carry it as well.

You blend all the ingredients together and then pour it into your chia seeds.

Give it a good stir, and then pop it in the fridge for 1 hour.

If the pudding is too runny, add more seeds. If it is too think, add more almond milk! OR cream, if you're feeling particularly indulgent.

It's very pudding like, extremely thick, and the almond milk lends a touch of creaminess to your matcha. It's like a thick frap, in a bowl.

Chia seeds are also super healthy and chock full of antioxidants and fiber. It's the perfect way to satisfy your sweet tooth, while getting some nutrients. I also promise it tastes better than it looks!

What's your favorite mid-day snack?
