SOBA for Lunch

Today was my first real day off in weeks. 

I celebrated by completely blocking my schedule off from meetings, errands, and dates. All I wanted was an hour to sleep in, some time to myself, and a proper lunch that wasn't coffee or pretzels, my sustenance at work. 

Despite wanting to stay in and laze all day, I ended up running errands and cleaning my house. One thing that always relaxes me is cooking though. Especially simple, easy, and clean dishes. So for lunch today, I whipped myself up some cold soba noodles. 

They're quick and delicious. Minimal prep and relatively healthy. I had a pack lying around from my recent trip to Toronto and threw a generous handful in the boiling water. After letting it cook for 5 minutes, I ran the noodles through ice cold water to stop the cooking process. After drying, I laid it on a bed of shredded Korean seaweed which is laced with hints of sesame oil, giving the bland soba noodles some flavor. It's been a long time since I've last had soba noodles, and as delightful as they are, it's something I rarely make. It was only because I came across them on a travel blog today that I decided to whip up my own. A fantastic decision if I may say so myself.

Lately, everyone has been asking me why I haven't been returning their calls and why I haven't had time to schedule a date with them. Well, the real reason is work. And if I'm not at work, I'm catching up on life and sleep. But recently, that's changed a little bit. I've spent most of my free time on the phone with Tiffany planning our upcoming Summer trip, which is rapidly encroaching on us. This is the first time we've traveled out of the continent together, and we're both trying to figure things out ahead of time. Not revealing too much, you can probably already guess where we are heading. I'm looking forward to bringing you guys along though, and excited for the adventures that lie ahead.
